I hope that you're enjoying the final days of summer with friends and family. The farmers' markets are brimming with the peak of the harvest, making it a great time to cook up something fresh and flavorful! Since I'm about to head across the pond to host my Culinary Tours this Fall, I'm using that inspiration to create some new recipes for my guests to make in the kitchen with me.

My first stop is the heart of Provence.  Something about this part of France feels like home.  Maybe it’s the dreamy landscapes or amazing wine, but either way, I can’t wait to , one of my Provençal favorites, Chicken with 40 Cloves of Garlic. It’s pretty easy to make, yet quite decadent and tasty on the plate.

Next up? Morocco, a spot on everybody’s must-travel-to list! We’ll spend time in magical Marrakech, and a true feast for the senses, and  then head to the  serene and fertile Atlas Mountains and Ourika Valley.  Guests will learn cooking techniques from women who are carrying on the traditions passed down through the centuries. From discovering the art of combining spices in a tagine (link recipe) to baking bread in wood fire ovens, I love sharing Moroccan cuisine so much that this will be the 20th group I’ve hosted there! I don't want to spoil the surprises, but you can follow this link and take a look at the kinds of places we've visited on a previous tour.

Last, but certainly not least, another group will meet me in Spain for a week of delicious week in Catalonia!  Recently named "World Region of Gastronomy", this is the perfect time for food and wine lovers like us to visit. Since Catalonia stretches from the fertile valleys of the Penedès Mountains to the crystal waters of the Balearic Sea, fabulous ingredients abound and the cuisine is simply over-the-top. I'm still deciding which recipes we'll make, but luscious Crema Catalana, with its creamy custard with cinnamon and citrus, and crisp sugary crust, is definitely on the list!

I've been working on the itineraries with my associates in France, Morocco, and Spain for months and we're excited to host everyone on these incredible tours.  Travel along with me virtually on social media @ChefJoanneWeir, or better yet, join me!
