I don’t know about you, but I have been cooking up a storm these days and I’m loving that I have time to do it up right. One day it might be an Italian feast with homemade pasta, another day it’s paella that I cook outside on the deck. I’ve also been making a lot of healthy Moroccan tagines with loads of summer vegetables. But today, it’s all about Mexico!
I’ll start by lighting up the grill. And that just makes me thirsty, so maybe I should pop into the kitchen and mix up a Paloma? Otherwise known as the lazy man’s margarita, it’s just the kind of zippy grapefruit cocktail that’s so refreshing these days. Drink, drink, yum!
And what’s a cool drink without a little bite to enjoy? Guacamole time! Now I’m inspired, and the freshly picked Brentwood corn that’s just arrived in my CSA is calling to me. I think I’ll grill it up and top it with tajin spices, queso fresco and homemade aioli, just like you find from the street vendors in Mexico.
Since the grill is hot and ready to go, I’m craving flatiron steak tacos with caramelized onions and a smoky and spicy chipotle crèma. That should do it!
But for dessert, what should I make? Oh, what about the Mexican-inspired cupcakes spiked with tequila that I came up with years ago when I was writing my Tequila book? I call them “Coco Loco” because they are crazy good!
