Six Ways to Cook with My Favorite Pantry Hero
I love it when you write back to me, or comment on Instagram or Facebook, and I can’t get over how many of you are doing so these days! If I haven’t already say it to you already —thanks for all of your sweet messages! As mentioned in my last letter, sharing kind words and positivity is just the kind of #SilverLining we all need right now.

Ok, let’s now talk about food!!! Cooking has always brought me so much comfort and in times like these, I’m grateful to have a stash of canned tomatoes in my cabinet. It's one of the staples that gives me the feeling that no matter what’s going on, a meal can be made.

Good quality tomatoes are canned at their peak within 24 hours of picking so you don't need to do much to bring out their flavor. (True confession—you just might find me in the kitchen eating Mutti polpa tomatoes with a spoon right out of the can, Yes, they are that good!). I’ve even made a tomato tartar with canned tomatoes. Seriously! You have to try it!

And the versatility of canned tomatoes is truly endless. I throw them into soups and stews, and I’ve even made a tomato tartar with good quality tomatoes. Do you have any leftover bread and eggs in the fridge? Why not make a savory Tomato Bread Pudding?! And speaking of eggs, my new go-to recipe is Eggs in Purgatory which fits the bill for breakfast, lunch or dinner!

This is also a great time to experiment with tomato classics. Years ago, when I was writing my second book, You Say Tomato, I was testing tomato soup recipes and tried infusing it with some orange and garnishing it with an orange-dill compound butter. It was insanely good! But I am always in the mood for an easy, classic version with fresh basil.

And we all know that any kind of pasta tossed with tomatoes is a marriage made in heaven. So why not change up the combo a bit and make a nice big pan of Greek lasagna, or Pastitso—perfect for feeding the whole family?!
