While I’m traveling and filming for the show, I always keep an eye out for new dishes that taste great and can be easily recreated at home. While filming in Parma and the Veneto Regions of Italy, I stumbled upon a classic that I just had to add to my weeknight repertoire- Eggs in Purgatory Amatriciana. The ingredients are a cinch to find, it’s easy on the wallet, you can prepare it in one pan, and it’s so versatile that you can serve it for breakfast, lunch or dinner. Best of all, it’s delicious.
