My mother is a great baker and for her, assembling a perfectly golden flakey pie crust and delicious fillings is a piece of cake! Over the years, she's taught me a few of her tricks and we are happy to share them with you:
First...Stay cool. Everything from your hands to the bowl to the butter need to stay cool. When the crust bakes, the melting of these butter pieces between layers of flour, create tiny air pockets that we perceive as delicious flakiness. That's when we say YUM!
Next...My mom uses a combination of butter and shortening in her crust. This way she gets light, flakey, flavorful and pretty crusts every single time.
Finally...the filling. It's easy to add too much sugar and lose the integrity of your delicious, fresh ingredients. Taste the fruit on it's own and let that guide you.
