Cooking Is Even More Fun with Margaritas!
What a weekend! Sipping tequila and perfecting the art of making tequila cocktails, homemade tortillas and really fun tapas to match the drinks! And for dessert, a Mexican Chocolate Soufflé with Tequila Crème Anglaise and it’s over-the-top! What’s not to love?

This was my Tequila and Tapas Weekend Cooking Class in San Francisco. We kicked it off at my restaurant with our infamous margaritas made with Herradura, Copita’s house tequila! Two ounces of Herradura tequila, freshly squeezed lime juice and agave nectar. How could 3 simple ingredients taste so delicious? Paired that with the creamiest guacamole, tomatillo-mint-cilantro and fire-roasted tomato- habanero salsas and our weekend was off to a great start.

On Saturday we convened in my kitchen for a day of cooking. Hilary made the Shrimp and Green Onion Pancakes while Jack jumped in to prepare Stewed Chickpeas with Chorizo (a.k.a. Habas con Chorizo). Then we got out the tortilla press and made homemade tortillas. Imagine caramelized onions and flatiron steak wrapped in a warm homemade corn tortilla smothered with Copita’s house-made chipotle crema. Oh, I can still taste the flavors!

We all rallied on Sunday to make refreshing Halibut Ceviche, tiny Spanish meatballs called Albondigas and Prado cocktails made with fantastic Partida blanco 100% agave tequila.

I’m not sure if it was the tequila or the delicious food that my students made, but everyone went home with a smile on their face.
