The art of tequila production has become as intensely intricate as wine-making, but let's face it- tequila is FUN! It became such a passion of mine, I opened Copita, my first restaurant and tequileria. Tequila is so versatile and can be paired with a multitude of foods and flavors, so it makes sense to serve it with small plates, or Tapas, and gather some friends together to enjoy it.
We'll kick off the weekend with a welcome reception at Copita, and then spend the weekend cooking a variety of tapas and creating tequila cocktails in my home kitchen studio. Some of the recipes you'll make during this weekend course include Peachy Ritas - a twist on classic Bellinis, a refreshing Gazpacho with Drunken Prawns, Classic Ceviche, my favorite little meatballs called Albondigas, Flatiron Steak tacos with handmade tortillas and Mexican Chocolate Soufflés with Tequila-Chipotle Crème Anglaise, just to name a few!

I can't imagine a better way to spend the weekend than cooking some delicious food from Tuscany. With all the great ingredients we have at our fingertips and the right techniques, it's easy to recreate the same delicious flavors you'd find in this celebrated region of Italy. During this weekend, we'll immerse ourselves in Tuscan menus that highlight the season. Whether we make Pizza with Tender Parsley, Prosciutto di Parma and Shaved Parmigiano Reggiano, Ribollita Soup, Roasted Butternut Squash Ravioli, or dishes like Artichoke and Lemon Fritters, “Pollo Forte” and Ricotta Gnocchi, and we'll be sure to make some fabulous desserts for a grand finale. Of course we'll taste delicious Tuscan wines that pair with the meals we've prepared! |
