It's summertime and the living's easy... So why make things difficult, especially in the kitchen?
If you are feeling a little stress over what to make for dinner, relax and read on. This is such a great time of year to make one of my favorite suppers- salad. Take vegetables fresh from the garden or the farmer's market, give them a chop, toss with a quick vinaigrette and perfectly cooked (don't worry, I'll tell you how) chicken breasts and voila... Dinner is ready!
The key is to use the freshest ingredients you can find and mix in some contrasting flavors. How about topping your fennel salad with some torn strips of prosciutto di Parma? Add some goat cheese for a tangy twist. Toss on some toasted walnuts that not only add some crunch but are also really healthy. And add some white balsamic or sherry vinegar to your dressing. Experiment!
