Since writing my book, TEQUILA: A Guide to Types, Flights, Cocktails and Bites, there’s been a lot of buzz about tequila. The art of tequila production has become as intensely intricate as wine-making, but let’s face it- tequila is FUN! It became such a passion of mine, I opened Copita, my first restaurant and tequileria! Tequila is so versatile and can be paired with a multitude of foods and flavors, so it makes sense to serve it with small plates, or Tapas, and gather some friends together to enjoy it.
We’ll kick off the weekend with a welcome reception at my restaurant on Friday evening, and then on Saturday and Sunday we’ll cook a variety of tapas in my home kitchen studio. Some of the recipes you’ll make during this weekend course include my Peachy Rita - a twist on the classic Bellini, savory Chorizo Hand Pies, a refreshing Gazpacho with Drunken Prawns, my favorite little meatballs called Albondigas, and Mexican Chocolate Soufflés with Tequila-Chipotle Crème Anglaise, just to name a few!

I absolutely love teaching in Provence, the southeastern region of France bordering the Mediterranean. The famous outdoor markets of Saint-Rémy and Uzès are always brimming with delicious cheeses, the freshest seafood, gorgeous fruits and vegetables, spices, and are truly a shopper’s paradise. Lucky for us, the ingredients from this area - olives, olive oil, garlic, sardines, lamb, chickpeas, fragrant herbs, cherries, peaches, and apricots, are easily found in the fantastic farmers’ markets we have here in San Francisco and across the U.S.!
During this weekend course, we’ll virtually transport ourselves to Provence through the recipes I teach during my culinary journeys. I’ll teach you how to make some of the classic Provençal recipes including Pissaladière, Bouillabaisse with Rouille, Socca (a chickpea, olive oil and cumin pancake from Nice), Spit-Roasted Leg of Lamb with Lavender Salt, Caramel Pot de Crème, Rustic Apricot Tart, and so much more. And of course, we will have wines paired from the region along with Rhone-style wines produced in California!
