Ten Simple Summer Go-To Recipes

Bonjour! I'm off to France and dreaming about galettes! The first time I tried one was at Chez Panisse. One crunch of the crust and ridiculously good filling and I was hooked. A galette is like a tart, but free-formed and rustic, with a large enough opening to get a nice glimpse of the filling. Savory or sweet, they are seriously addictive.

Over the years, I have perfected the dough recipe and can let you in on a secret...get your butter AND flour measured and chilling in the freezer. Getting them really cold helps the dough to produce a flakey texture that will make your friends want to kiss you on both cheeks and say "Merci!". I also like to use a food processor. It works and I don't! Just be sure to avoid over pulsing and add the liquid ingredients by hand.
