A week in Provence
Have you ever made pasta by hand at home and gotten so frustrated that you wanted to throw the pasta dough and pasta machine out the window? Well, now is your chance to master the technique of creating handmade pasta at home and have fun doing it! Years ago, when I worked at Chez Panisse, I made pasta for months and really mastered the technique. After rolling about 40 pounds of the heavenly stuff each day, I realized that I loved the process! Join me in San Francisco and spend a weekend learning the art to making your own pastas!

We'll start by making a simple food processor pasta that you can whip up in 10 minutes. Imagine the silky Agnolotti with Fontal, Fontina, Butter and Sage that we will make in our class, a very popular dish in my house. (Remember to ask me how I wooed my husband in Italy with this dish!) During this hands-on weekend course, I will also teach you how to make buccatini, my favorite ravioli, and share tricks on how to achieve the most delicious results! We'll round out our weekend with starters, soups, salads and desserts, and of course fantastic wines paired with the pasta dishes we've prepared, and sit down to lunch in my dining room. By the end of our time together, you will be ready to amaze your friends with your handmade Italian pasta-making abilities!
