| Many moons ago, when I was writing my first cookbook, From Tapas to Meze, I truly fell in love with Morocco. I remember going to a restaurant where the entrance fountain was filled with wonderfully aromatic rose petals and candles everywhere. We sat on over-sized embroidered pillows around hammered silver tables and ate course after course of the most delicious food. At the end of the meal when they poured mint tea high above the table, I was intoxicated. The next morning, my senses were engaged and heightened as I visited the souks (open-air markets) with pyramids of melons, peppers and tomatoes. I was also drawn to the preserved lemons, olives and aromatic spices piled high into cone shapes. I've wanted to bring my students to Morocco with me ever since so we could share this experience. I've been looking for the right location and have finally found it, a luxury private estate, Jnane Tamsna. This will be our extraordinary home for the week. We'll take a few excursions and in our hands-on cooking classes I will be teaching with the house chef, Bahija, we will make b'stilla - the classic Moroccan savory pastry, we'll learn to hand roll couscous, and of course make rich lamb and vegetable tagines with olives and preserved lemons. We'll enjoy dinner at the villa lit by millions of candles, and we'll taste wonderful Moroccan wines paired with the meals we prepare together.
